  • 0.5 tbsp olive oil
  • 1 piece/s zucchini
  • 2 piece/s carrot
  • 3 piece/s garlic cloves
  • 1 tbsp curry powder
  • 0.25 tsp caraway seed
  • 0.25 tsp coriander
  • 1 l vegetable stock
  • 65 g quinoa
  • 70 g red lentils
  • 2 piece/s kale
  • 400 g chickpeas
  • 1 pinch Salt & Pepper
  • 250 ml Dream Organic Rice Drink

Instructions

  1. Heat the oil over medium heat. Sauté the diagonally sliced zucchini and carrots with the finely chopped garlic.  Add the curry, turmeric, cumin and coriander. Stir well. Cook for 1 to 2 minutes.
  2. Pour the vegetable broth over the vegetables and add the quinoa. Season with salt and pepper. Cook over medium heat for 10 minutes. Add the rinsed red lentils and quinoa. Cut the kale in strips and add to the soup. Cook for another 5 minutes.
  3. Add the rinsed chickpeas and the Dream Organic Rice Drink. Cook 5 minutes further. Add seasoning if necessary.
  4. Add the rinsed red lentils and quinoa. Cut the kale in strips and add to the soup. Cook for another 5 minutes.
  5. Add the rinsed chickpeas and the Dream Organic Rice Drink. Cook 5 minutes further. Add seasoning if necessary.

Instead of kale, you can also use fresh spinach. Replace the organic rice drink with coconut rice drink for a light coconut note.
