Hearty green asparagus tart
Green asparagus with a difference: an unusual, extra-light recipe idea using green asparagus. A treat for the eyes and taste buds, at lunchtime or in the evening.
3 dl vegetable bouillon
1 bunch (500 g) green asparagus, woody root end removed
1 cup Dream Rice
100 g grated gruyere
1 ready-made puff pastry (about 270 g)
1 tbs margarine or butter
2 tbs breadcrumbs
2 tbs grated Parmesan cheese
1. Bring the stock to a boil. Cook the asparagus for 5 minutes. Drain. Beat the eggs in a bowl and mix them with the Rice Dream® drink. Season with salt and pepper. Add the gruyere. Set aside.
2. Preheat the oven to 200 °C. Roll the dough further if necessary. Grease a rectangular or round tart pan. Line the pan with the pastry. Prick the bottom of the dough with a fork and create several pricks. Sprinkle with breadcrumbs and grated Parmesan cheese. Pour the egg mixture on top. Arrange the asparagus side by side over the egg mixture. Bake the tart 25 to 30 minutes.
3. Let cool. Cut the tart into portions.
Serve with slices of raw ham. If this is intended as a light meal, serve a mixed salad with it.
